A twist to the traditional bibingka
Christmas season will not be complete without the classic Filipino delicacy bibingka.
And with bibingka being the comfort food of many during the holidays, some restaurants can't help but put a modern twist to this delicacy.
However, Chef Gene Gonzalez prefers to cook bibingka the old fashioned way using clay pots and banana leaves.
"I want to preserve traditional recipes. We still stick to the classics. Kung ano 'yong pinakauna noong unang panahon. Mayroong mga multi-tiered na cooker pero iba pa rin 'yong luto sa charcoal eh. Iba pa rin 'yong ginawang old-fashioned na pagluluto," he said.
