The giant or mudcrabs live in brackish water or a mixture of sea and fresh water. They usually grow to up to more than half a kilo in weight. The must try are the Crab with honey garlic, crab with sweet chili sauce, crab kaldereta, alimango suam and lelut ema.
Compare to mudcrabs, crabs are caught in the sea are smaller in size. There are various kinds of crabs in the Philippines like Curacha in Zamboanga, blue crabs in Negros and onse-onse crabs in Zambales. Each species has a special recipe, like curacha in alavar sauce, deviled onse-onse and kasag kare kare.
Freshwater crabs are the smallest, but when it comes to taste, they are at par with bigger crabs. This is because it is rich in aligue or crab fat that gives rich flavour to dishes like rice aligue, pasta aligue, sushi aligue and pinakbet with crab fat.
