Mga putaheng pinalinamnam ng kambing, ihahain sa 'Pinas Sarap'


 


Lechon, kaldereta, adobo at sinampalukan… mga ulam na pinasarap ng baka, baboy at manok. Pero paano kung gawa ito sa kambing, titikman niyo pa ba? Ngayong Huwebes samahan si Kara David tikman ang mga nagsasarapang putaheng gawa sa kambing.

 


Tuwing may fiesta o espesyal na okasyon gaya ng kasal, bida sa hapag ang lechon baka o kaya naman ay lechon baboy. Pero sa Tarlac, ang kanilang specialty, lechon kambing. Mas mura man ang lechon kambing sa lechon baka at lechon baboy, sa lasa at sarap hindi naman ito magpapahuli. Ang mga paboritong ulam ng mga Pilipino gaya ng adobo at sinampalukan, may kambing version na rin, ang sweet and spicy goat adobo at sinampalukang paa at ulo ng kambing.

 


Hindi popular na pagkain ang mga putaheng gawa sa kambing dahil sa tinatawag nilang “anggo” o lansa ng goat meat. Para matanggal ito, may tamang paraan ng pagkatay at pagluluto. Kapag nailuto ng maayos, siguradong papatok din ito sa panlasa ng karamihan. Sa katunayan, may isang kainan na tinatawag na “Kambingan ng mga Sikat,” dahil mga kilalang celebrity at personality ang kumakain dito gaya nina dating Pangulong Joseph ‘Erap’ Estrada at Senador Manny ‘Pacman’ Pacquiao. Bukod sa calderetang kambing, best seller nila ang salt and pepper goat spareribs at drunken goat spare ribs.

 


Sa kambing, lahat ng parte mapapakinabangan. Imbes na itapon ang lamanloob, pwede pa itong iluto at pasarapin, tulad ng paboritong sabaw na papaitang kambing at pulutan na kinilaw na kambing. Ang gatas naman ng kambing ginagawang cream cheese at feta cheese. Para naman sa dessert, siguradong magugustuhan ninyo ang Goat’s cheese ice cream!

In every fiesta or special occasion like wedding, beef lechon or pork lechon is very popular. But in Tarlac, their specialty is goat lechon. This is cheaper but when it comes to taste, it is at par with beef and pork lechon. Filipino’s favourite dishes like the adobo, sinampalukan or soup in tamarind soup also have goat version, the spicy goat adobo and head and feet sinampalukan.

Goat dishes are not popular because the goat meat has a distinct odor. To remove this, there is a proper way of preparing the meat. When it is prepared properly, it is very good. In fact, there is a place known as the “Kambingan ng mga Sikat” of goat meat of the star, because many celebrity and personalities eat here like Former President Joseph “Erap” Estrada and Senator Manny “Pacman” Pacquiao. Aside from goat kaldereta, their best seller is pepper goat spareribs and drunken goat spare ribs.

Every part of goat is useful. Instead of throwing the innards, this can be cooked as papaitan and kinilaw. The goat’s milk is prepared as cream cheese and feta cheese. For the dessert, they have Goat’s cheese ice cream!
