Cebuano dishes na may Chinese at Spanish influence, ihahain sa 'Pinas Sarap'


 

Sa part 2 ng ating Cebu culinary adventure, samahan si Kara David tikman ang mga ipinagmamalaking putahe ng mga Cebuano na may Chinese at Spanish influence.

Bago pa man dumating ang mga Kastila, matagal ng naninirahan ang ilang mga Chinese sa Cebu. At ang isa sa kanilang iniwang yaman, ang istilo ng kanilang pagluluto. Isa sa trademark ng Chinese cuisine ang malasang sarsa. Ganito rin ang katangian ng isang Cebuano dish na may Chinese roots, ang Patatim! Sa dish na ito, ilang oras pinalambot ang pata ng baboy at sarsa pa lang daw ulam na. Isa pang pagkaing Tsino na paborito ng mga Pilipino, ang pancit. At ang mga Cebuano, may sariling version nito – ang Bam-i! Ngohiong naman ang Cebuano version ng Chinese spring rolls.

 


Marami ring pagkaing Pilipino ang may impluwensiya ng mga Kastila. At ang isa sa pinakamalaking ambag nila, palaging bida sa fiesta at mga handaan – ang Lechon. Sa Cebu, maraming klase ng Lechon ang matitikman gaya ng Zubuchon, Ruthy’s lechon at ang Lechon Carcar kung saan ang katas o drippings ng lechon, ginagawang sawsawan! Ang ilan pang Cebuano dish na Spanish inspired ang Balbacua, Pochero at Chorizo!

For the 2nd part of our Cebu culinary adventure, join Kara David as she tries out the famous dishes of Cebuanos with touch of Chinese and Spanish influences.

Before the Spanish arrived in the Philippines, Chinese has long been living in Cebu. And one of the wealth that they left is their style of cooking. The trademark of Chinese cuisine is their tasty sauce, this is similar to the qualities of Cebuano dish with Chinese roots called Patatim. In this dish, meat is cooked for hours, and its tasty sauce will leave you wanting for more. Another Chinese food that is famous is pancit. And the Cebuanos have their own version of this, it is called Bam-I, and Ngohiong is the Cebuano version of spring rolls.

There are also various Filipino foods that has Spanish influence. And one of their biggest contributions is the very popular dish every fiesta---Lechon! In Cebu, there are many kinds of lechon like Zubuchon, Ruthy’s lechon and lechon Carcar where the the drippings of the lechon is used as sauce. Some Cebuano dish that are Spanish inspired are Balbacua, Pochero and Chorizo.
