Kesong puti dishes, ihahain sa 'Pinas Sarap'

Karaniwang gawa sa gatas ng kalabaw, baka o kaya naman sa gatas ng kambing ang kesong puti. Natutunan nating mga Pilipino mula sa mga Kastila ang paggawa ng keso. Sa katunayan ang keso ay mula sa salitang Espanyol na “queso.” At ang bayan ng Sta. Cruz sa Laguna, tinaguriang Home of Kesong Puti dahil sa mahigit apat na raang taong industriya ng kesong puti rito.
Nakasanayan na natin na ipalaman sa pandesal ang kesong puti tuwing almusal. Pero sa bayan ng Sta Cruz, ginagamit na sangkap ang kesong puti sa pagluluto. Ilan sa kanilang ipinagmamalaking dish na mas pinasarap ng kesong puti ang Tahong con Queso, Ginataang Pako with Kesong Puti Balls at Paella Negra with Kesong Puti. Maging ang mga international pastries and desserts, nilagyan nila ng kesong puti twist gaya ng Tiramisu with Goat’s Cream Cheese at Cheese Cake with Kesong Puti.

Kesong puti is commonly made from carabao, cow or goat’s milk. Filipinos learned the process of cheese making from the Spanish. In fact the term keso is from the spanish word “queso”. The town of Sta. Cruz in Laguna is known as the Home of Kesong Puti as they have been producing kesong puti for more than four hundred years.
Kesong puti is usually used as spread in pandesal bread and consumed during breakfast. But in Sta. Cruz, kesong puti is used in various dishes. Some of their famous dishes are tahong or mussels con queso, ginataang pako with kesong puti balls and paella negra with kesong puti. Even for some international pastries and desserts, they put a twist and add kesong puti like Tiramisu with Goat’s cream cheese and cream cheese with kesong puti.
