Kamote Recipes from “Good News”


The sweet potato, popularly known as kamote, is every health-buff’s dream. It has no cholesterol, zero calories, and is one of the most nutritious foods in the world. It is high in dietary fiber, but low in fat. It contains calcium, good carbohydrates, carotene, potassium, Vitamin C, and many more nutrients. In the Philippines, however, this superfood is usually only boiled or fried in sugar as dessert. But with a little creativity, the humble kamote can be turned into a tasty, gourmet treat. “Good News” rounded up some recipes that integrate the healthy kamote into everyday favorites like burgers, stews, and fritters. Kamote Burgers Ingredients 1 kilo of kamote 1/3 cup flour 1 egg (beaten) ¾ cup of tofu (mashed) 1/3 cup of carrots (grated) burger buns Boil the kamote until soft, then mash along with the tofu. Include the egg, flour, and grated carrots. Add salt and pepper to taste. Shape the mixture into patties then fry each side until golden brown. Remove excess oil then serve on buns. Kamote Chicken Stew Ingredients 1 kilo chicken (sliced into small cubes) 1 small onion (chopped) 3 cloves of garlic ( chopped) 1 teaspoon of ginger (grated) ½ cup kamote (cubed) ½ cup pineapple chunks/tidbits ½ cup pineapple syrup ¼ cup evaporated milk Water Salt and pepper to taste Cooking oil Heat oil and sauté the garlic and onions. Add the kamote and the chicken and sauté for three minutes or until the chicken changes color. Add a pinch of salt and pepper to taste. Pour in the pineapple syrup and tidbits. Add a bowl of water and evaporated milk. Boil for ten minutes.   Kamote Fritters 1 cup flour 1/2 cups water 1 egg 1 1/2 cup kamote, peeled and julienned 1 onion, chopped 1 cup bean sprouts salt and pepper to taste To make the batter, mix the flour, egg, and water. Season with salt and pepper. Mix in the kamote, bean sprouts, and onions.
