Now that school is back, moms and dads have to be more inventive when preparing the kids’ lunches. Forget the usual hotdogs or chicken nuggets and rice combo--with a little more effort, you can be sure your kids will come home with empty lunch boxes at the end of the day. Pork Roulade with Mushroom Gravy Ingredients 1 lb Pork tenderloin 5 slices quick-melt cheese 5 slices of ham 3 cups chicken stock 1 cup button mushrooms 1 cup flour 2 eggs 1 cup bread crumbs Directions: Layer the sliced ham over the pork steak, then the cheese over the ham, then roll. For the breading, season the flour, the eggs, and the bread crumbs with salt and pepper. Beat the eggs. Coat the roulade with flour, then dip into the beaten eggs, and then coat with bread crumbs. Heat oil in the pan and fry the roulade for about 8 minutes or until golden brown For the mushroom gravy, slice the button mushrooms and sauté in butter. Add flour and chicken stock. The sauce is ready when the mixture is thick and boiling.
Chicken Poppers Ingredients 1 cup peeled and grated carrots 2 cups ground chicken 1 tbsp garlic 1 tbsp onions Directions Mix all the ingredients together and shape into one-inch thick balls. Roll the chicken balls in breading mixture (similar to the pork roulade above). Fry until golden brown. Here’s a healthy rice recipe to go with the chicken poppers: saute onions, red bellpepper, and green bellpepper in butter. Add half a cup of carrots. Add uncooked rice, add water, and mix. Cook like how you would usually cook rice, for 15 to 25 minutes. Chicken Karaage This is the Japanese version of everyone’s favorite crispy fried chicken. Ingredients 300g boneless chicken thighs 3 tbsp Soy sauce 1 Ginger Garlic Onions Sugar Salt and pepper ½ cup cornstarch Directions Grate the ginger. Mix the chopped garlic, onions, and soy sauce. Squeeze the grated ginger over the mixture. Add salt and cornstarch. Marinade the chicken in this mixture for 24 hours.
