Christmas 2024: Where to get bibingka cheesecake for the holidays

Bibingka is a Filipino delicacy almost synonymous with the Christmas season.

It's made with rice flour, coconut milk, sugar, and eggs and is typically cooked in banana leaves.

In 2023, the "Encyclopedic of Flavors" publication TasteAtlas named bibingka as one of the 100 best cakes in the world, ranking 16th with a rating of 4.4 stars.

While bibingka is best enjoyed in its authentic form, this Christmas season, why not take it up a notch by trying out bibingka in a cheesecake form? Here are five food establishments that offer them.

1. Bo's Coffee

Bo's Coffee, a homegrown coffee shop, has launched a "Paskong Pinoy" menu for the Christmas season, available for a limited time only. Among its unique offerings is the bibingka cheesecake (P2,100), a creative twist on the traditional Filipino rice cake.

2. Wildflour Café + Bakery

Wildflour Café + Bakery's bibingka cheesecake (P2,840) is a delightful fusion of tradition and innovation. It features the classic elements of a bibingka, including salted egg, cheddar, and coconut flakes, atop a whole pie of a classic basque burnt cheesecake.

3. Deli by Chele

Deli by Chele's bibingka cheesecake, dubbed "CHIKA" (P995), is a masterpiece of Chef Carlos Villafor. It features a basque burnt cheesecake infused with the traditional cheesy elements of a bibingka.

4. The Food Market

The Food Market's bibingka cheesecake (P1,980) offers a smooth basque burnt cheesecake topped generously with cheese and slices of salted egg.

5. Dessert Draft Cake Shop

Dessert Draft Cake Shop's bibingka cheesecake (P1,450) combines the rich, creamy texture of cheesecake with the distinct flavors of bibingka, perfect for your sweet cravings for the holiday season.
