Margarita Fores partners with Ramen Ron for limited-edition Batchoy-inspired ramen, seafood bun

It is no secret that the Philippines has some of the best soup dishes, and among them, Iloilo's La Paz Batchoy. 

So it's really no surprise that renowned female chef Margarita Forés has taken inspiration from the beloved Ilonggo dish for her latest collaboration with Ramon Ron: The batchoy-inspired ramen and seafood bun.

The Batchoy Ramen is made with Ukokkei Batchoy-based broth and thin ramen noodles topped with house-made Chashu, torched Bone Marrow, pork liver, Shio Tamago, and crushed Chicharon.

On the other hand, the RR Soft Shell Crab Bun is made with crispy fried soft shell crab with talangka fat mayo, one of Margarita’s favorite ingredients, and tangy Atchara-inspired Japanese pickles made of carrots, papaya, daikon radish, and onions.

The Batchoy Ramen and RR Soft Shell Crab Bun will be served as a set for P890 beginning May 9 until June 9 only.

The collaboration came after Margarita, the mother of Ramen Ron founder Amado Forés and Hiroyuki Tamura, the executive chef of Ramen Ron, shared a meal in a Filipino restaurant where they ate Batchoy. Right then and there, the two had an epiphany that a Batchoy-inspired ramen would be a hit. 

“They realized both dishes had similarities and they worked together to combine my Mom’s love for Batchoy and Talangka Crab Fat and Tamura-san’s expertise in Japanese cuisine,” Amado said in a press release. 

Ramen Ron is located at Rockwell Center, Makati City and Central Square Mall in Bonifacio Global City.
