Bibingka included in the 100 best cakes in the world according to Taste Atlas


Our very own bibingka has been named one of the 100 best cakes in the world.

"Encyclopedia of flavors" publication TasteAtlas lists bibingka at number 16, with a rating of 4.4 stars, sliding down three notches from last year's number 13 ranking

It described bibingka as "a simple Filipino cake that consists of rice flour and water."

"It was initially prepared in clay pots that were lined with banana leaves, which would impart a distinctive, smoky flavor to the dish. Bibingka is believed to have appeared under the foreign culinary influence, and the first written reference describing a similar cake dates back to 1751," it added.

Russia's Medovik, a layered honey cake topped the list, with Poland's Sernik (a cheesecake), Brazil's Pave (similar to tiramisu), Japanese Cheesecake, and Sweden's Kladdkala (chocolate cake) completing the top 5.

Rounding out the rest of the top 10 are Poland's S?kacz (a creamy cake made rotating over an open fire like lechon), Czech Republic's Valašský frgál (a round cake typically made with dried pears), Guatemala's Paste de Banano (banana sponge cake), Poland's Karpatka's (a vanilla-flavored cream cake), and Argentina's Chocotorta (a tiramisu-like dessert with dulce de leche and cream cheese).

Aside from the Philippines and Japan, other Asian countries that made it on the list include Indonesia with two entries — Kue Putu at no. 70 and Kuih Lapis at 84 — and Vietnam, also with two entries, Banana Cake or Bánh Chu?i (no. 72) and Steamed Tapioca Layer Cake or Bánh da l?n (no. 99).

Japan's other winning entry is Kasutera (no. 21), a traditional sponge cake in the Land of the Rising Sun.

The New York-Style Cheesecake (no. 12), Molten Chocolate Cake (no. 13), Coconut Cake  (no. 28), Devil's Food Cake (no. 64), Red Velvet Cake (no. 93),  Ice Cream Cake (no. 96), and Bundt Cake (no. 100) all made the cut, with specific cities in the U.S. being cited for the version of these cakes. — LA, GMA Integrated News
