Have you tried this famous Quesa Birria in Poblacion?


Since Onlypans Taqueria opened in Poblacion, a trip to Makati’s hippest bloc simply ain’t enough without grabbing a bite of its famous Quesa Birria.

In an episode of Unang Hirit, Onlypans founder Audrey Cruz shared how her pandemic-born business of selling sushi bake online turned into an aesthetically pleasing physical joint in Poblacion. They only had a capital of only P3000.

According to Audrey, they knew sushi bake was a passing fad so they ventured into exploring Mexican food, which happens to be her comfort food.

When she got the chance to import chilis straight from Mexico, Onlypans started crafting the recipes for its tacos.

The Onlypans’ Quesa Birria (P380) recipe underwent two years of research and development before it became a hit.

For those not in the know, Quesa Birra is a taco form containing a hefty amount of shredded tender beef and mozzarella cheese wrapped in warm tortilla.

To make the taco more flavorful, you may dip it in a complementary consomme, which "contains spices, chilis, and the beef itself,” the owner added.

Lactose-intolerant? Onlypans also offers tacos without the cheese.

In addition, the taqueria also sells Quesadilla in different variants like chicken (P300), shrimp (P400), pork (350), and cheese (250). — LA, GMA News
