This chicken inasal meal comes with an entire bilao of garlic fried rice to fully satisfy your cravings

Gone are the days when you're limited to one cup of rice (or two) when you order a Negrense favorite meal, chicken inasal (charcoal-grilled chicken), for to-go.
In this restaurant called "Chickey's Inasal," you'll get to have a hefty amount of garlic fried rice infused with the well-loved chicken oil as well as other inclusions such as salted egg, liempo, barbecue, and more.
In this GMA Online exclusive interview, Chickey's Inasal co-founder and general manager Roselle Alteria shared more of her inspiration and vision on entering the grilled chicken take-out market in the Philippines, especially at the height of the pandemic.
How did the idea of Chickey's Inasal come about?
Roselle: The idea of Chickey's Inasal was born at the height of the pandemic. As a food player for quite some time, the pandemic has forced us to rethink ways to sail through the pandemic. We were inspired by our observation of how the grilled chicken take-out market continued to thrive and even boom during the pandemic.
However, the market is too saturated with various "litson manok" choices. So, what better way to enter the industry with something familiar and well-loved by Filipinos, chicken inasal. We aim to make this Negrense hometown hit, grilled chicken barbecue, a Manileño staple just like how litson manok currently is.
Where did the inspiration for "bilao" serving for Chickey's Inasal come from?
Two things. We wanted to create a product where we can showcase the variety of our menu offerings, from our Bacolod Original Inasal to our Cebu Style Liempo—in just one serving. Why struggle with choice overload if you can have them all right?
But more importantly, we wanted Chickey's to become a part of the life of Manileños, not just in their day-to-day dining experience but also to become a staple in any gatherings and celebrations and gatherings with family, friends, and co-workers.
How did you identify what food to combine in the "bilao" apart from Chicken Inasal?
At Chickey's, we love the idea of making meals that are a feast for the senses. After all, food is a multisensory experience. So we needed to ensure that all the items we put in our bilao make sense for Filipino food and make it ever so visually appealing, especially in today's social-media-driven world. Our interactions with food highly trigger our cravings through sight.
Where do you see Chickey's Inasal in the next couple of years?
Like any other food brand out there, our goal is to be a household name and be one of the iconic leading brands in the Grilled Chicken and Inasal food category in the Philippines.
What's next for Chickey's Inasal? Do you have any expansion plans?
We are set to expand Chickeys to include dine-in restaurants and fast food outlets and open more stores outside Metro Manila. We also want to grow our brand by adding more items to the menu and venture into new product categories such as ambient/shelf-stable bottled products, and frozen and chilled products! The world is our oyster!
