Why Cebu's The Pig & Palm is a totally worthy gastronomic experience
If you’re looking to take your stay in Cebu up a notch, the best way to do it is immerse yourself with good food and an experience that isn’t readily available anywhere. Enter: The Pig & Palm.
Brought by Michelin-starred British chef Jason Atherton, the resto aims to delight its guests with unique and globally inspired meals with the help of head chef Jamie Doe.
According to Doe, they do this by introducing a menu that consists of small modern tapas-style dishes that are perfect for sharing until you can’t have any more.
“The idea behind it is [that you] order a number of dishes for the table and then [you] share, and then if you’re still hungry, you order some more. It’s not a traditional starter, main, dessert concept,” he said.
“There’s not much variety of the same style of restaurants as this,” he added. “This, for me, works great for the local market because lots of people like to have big families (over).”
With this, guests are sure to get a little bit of everything on their menu offering a wide array of goodies.
The Pig & Palm is the Athertons’ 16th restaurant worldwide. Though it’s taken a lot of inspiration from London, Doe said they did their best to source local ingredients for their offerings.
“I’m actively seeking to find new supplies, more local people that I can interact with,” he said. It’s really nice to support locals and for me, I cook what I believe people like to eat.”
“We’re not too fancy, fine dining. We’re just full on flavor, so that’s my main focus—the flavor,” he added.
True to what’s promised, a day filled with flavor was exactly what we had when we dropped by the Cebu restaurant for a familiarization tour by the Philippine Tourism Promotions Board and Philippine Airlines.
Housed in a cozy pub-like spot accentuated with the perfect balance of wood and modern touches, we were treated to dishes that were both pleasing to the eye and the palate.
