Sinigang na baboy named best soup in the world in 2021

The Philippines’ beloved sinigang na baboy has been named the best rated soup in 2021 by food and travel website TasteAtlas.

The list released Friday ranked sinigang na baboy No. 1 on its top 100 list in the soup category with a rating of 4.7 out of 5.

It described the dish as a “a unique soup that is a true representative of Filipino cuisine” with its “sour lightness perfectly matching the harsh tropical heat of the country.”

“This variety of sinigang—Filipino savory and sour soup—consists of various pork cuts that are simmered along tamarind fruit. Tomatoes, onions, garlic, okra, white radish, water spinach and green long peppers are also commonly used for this soup,” it said.

Meanwhile, the Philippines’ sinigang, which is listed as a vegetable soup, is also included in the list at No. 3 with a rating of 4.6.

“Sinigang is a sour Filipino soup consisting of sampalok (fruits of the tamarind tree), water spinach, green pepper, cabbage, broccoli, eggplant, diced tomatoes, sliced onions, ginger, green beans, water, and salt. The basic broth usually consists of rice washing, with the addition of a souring agent,” it said.

It said the dish was “traditionally served hot and steaming as a main dish, with rice as its accompaniment. It is an often seen dish at special occasions such as birthdays or weddings, and over time, as the dish became more popular, there were new variations that used guava or raw mango instead of sampalok and each region developed their own version of the popular soup.”

Rounding off the top 10 are UK’s Cullen Skink, Romania’s ciorba de peste “ca-n Delta,” Japan’s ramen, Poland and Belarus’ zurek, Japan’s miso ramen, Turkey’s mercimek corbasi, Lithuania’s saltibarsciai, and Japan’s tonkotsu ramen.

Apart from sinigang, other Filipino dishes cited by TasteAtlas Awards 2021 were lumpia, which was the No. 2 best-rated side dish, and sisig and adobo, which ranked 72 and 81 respectively on its list of 100 best dishes in the world.

Last August, sinigang was hailed the No. 1 best rated vegetable soup in the world by TasteAtlas with a rating of 4.8. – RC, GMA News
