Learn how to make Iloilo’s Tinuom on your own!


Tinuom is a local Ilonggo dish and it's been celebrated in the province for several years. 

In Monday’s episode of “Unang Hirit,” Isabel Lopera-Retotar shared some facts on how the Tinuom came to be. She's been cooking the dish for almost 40 years now, after her father, Quintin Lopera, started it in 1950.

“Kaya tinawag na Tinuom kasi binalot sa dahon ang manok. Depende sa edad ng manok kung madali lang lutuin. Mga kalahating oras siguro pero kung matanda, mga isang oras,” she said.

The Tinuom Festival started in 2006 and has been celebrated every September 10 since.

According to Isabel, she was able to fund her six children’s college education by cooking Tinuom.

Here is how you can make Tinuom at home:

Ingredients:

  • Garlic
  • Tomato
  • Onion
  • Ginger
  • Tanglad
  • Native chicken
  • 2 cups of water
  • Salt
  • Banana Leaf

Procedure:

  1. Put all the ingredients inside the banana leaf.
  2. Tie the leaf and boil for at least 30 minutes.

A customer described the dish as “wow na wow” because of its “unique” flavor.

Another said that the meat used makes it even more flavorful.
