Cardinal Tagle makes Menudong Imus, Kamote Pie


In another episode of Cardinal Luis Antonio Tagle’s live cooking show, he shared recipes that were inspired by his hometown and family.

In a live broadcast posted on Pontificio Collegio Filippino’s Facebook page on Sunday, he showed the step-by-step process of making Menudong Imus and Kamote Pie.

The former has long been requested by those living in Cavite while the latter was suggested by Cardinal Tagle’s sibling.

Menudong Imus

According to Cardinal Tagle, instead of using tomato paste or sauce, they use fresh tomatoes for this recipe.

Ingredients:

  • Oil
  • Garlic and Onions
  • Pork
  • Fish sauce
  • Pepper
  • Water
  • Fresh tomatoes
  • Liver
  • Hotdog
  • Salt and Pepper
  • Bell Pepper
  • Fried Potatoes
  • Raisins

Procedure:

  1. Sauté the garlic and onions in oil.
  2. Cook the pork and add a bit of fish sauce to add saltiness to the meat.
  3. Add water and the fresh tomatoes. Let it boil for a few minutes.
  4. Add the liver and hotdog.
  5. Sprinkle with salt and pepper to taste.
  6. Wait until pork is tender then top with bell pepper, fried potatoes and raisins.

Kamote Pie

The meal wouldn’t be complete without dessert, of course, so Cardinal Tagle also prepared a healthy yet satisfying one for his viewers.

Ingredients:

  • 3 cups roasted sweet potatoes (mashed/purée)
  • 4 eggs
  • 1 cup evaporated milk
  • 1 can condensed milk
  • Cinnamon powder (Optional)
  • All-purpose Cream
  • Dough (Handmade or bought)

Procedure:

  1. Mix evaporated milk, condensed milk and all-purpose cream with the eggs.
  2. Add the mixture to the sweet potato purée.
  3. Add 1/2 teaspoon of cinnamon powder
  4. Pour 3/4 to dough or crust
  5. Put in the oven for 10 minutes, 180 degrees

Once done, Cardinal Tagle described his masterpieces as “talagang masarap.” He added that he achieved this through “trial and error.”
