Kara David shares easy recipe for eggplant with minced pork in Szechuan sauce


Kara David is back with another episode of "ECQusina," and this time she shared an easy recipe for eggplant with minced pork in szechuan sauce.

In her online show, the "Pinas Sarap" host taught viewers how to make the tasty Chinese sauce at home using everyday ingredients that they probably already have in the pantry.

 

Kara also shared some interesting facts about eggplants, along with its rich history and how it's cooked differently in various cuisines.

To make "Eggplant With Minced Pork in Szechuan Sauce ala Kara David," you'll need:

  • Eggplant
  • Minced pork
  • Soy sauce
  • Oyster sauce
  • Sesame oil
  • Rice wine vinegar (Or regular vinegar)
  • Onion
  • Garlic
  • Szechuan peppercorns (Or regular pepper)
  • Chili flakes
  • Sugar
  • Cornstarch
  • Water (or pork broth)

Start by frying some sliced eggplant in some oil. Kara already soaked the eggplant in some water and salt for about 30 minutes.

After setting the eggplants aside, Kara started sauteing onions and garlic before adding in the minced pork.

While that cooks, it's time to get started on your sauce.

Kara mixed soy sauce (3 tbsp.) with sugar (2 tbsp), followed by the rice wine vinegar (2 tbsp), water (1/4 cup), and oyster sauce (2 tbsp).

Once the pork cooks, pour the sauce into the pan. Then, it's time to add peppercorns, chili flakes and sesame oil.

Finally, you add the eggplant, let it simmer, and it's ready to serve!

For those who haven't tried szechuan before, "Eggplant With Minced Pork in Szechuan Sauce ala Kara David" will let you experience a burst of strong flavors.
