Even food as common as lugaw can be given an extra kick! In a pot, heat oil and sauté garlic, onions and ginger. Add patis and bring to a boil. Stir in the rice grains and stock and bring to a boil. Reduce the heat to simmer for 30 to 40 minutes while stirring constantly until the mixture thickens. Add the chicken bouillon cube, top with cheese, sliced hard-boiled eggs, fried garlic, and spring onions. Having lugaw everyday for merienda won’t be so bad with this rich new flavor.

 

Cheesy Caldereta

Surprise the family with another creamy creation they will enjoy. Marinate ½ kilogram of beef in a mixture of ¼ cup vinegar, one teaspoon of salt, and two cloves of crushed garlic for two hours. Once well marinated, fry the beef pieces. Sauté with onions until beef is tender. Pour in ½ cup of tomato sauce and beef stock. Add one cup of sliced bell peppers and one piece of laurel leaf. Cover and simmer until meat is tender. Blend in ½ cup of liver spread and one cup of cheese. Cook for five more minutes and serve. This saucy chicken caldereta is a definite must-try for dinner!

 

Monggo Soup with Cheese

It’s time to recreate the good old monggo soup! In a pan, sauté onion, garlic and tomatoes. Once soft, add ground pork and cook in medium heat for one to two minutes. Add monggo to the meat and stir in one cup of water. Let this cook for 15 to 18 minutes. Stir in malunggay and ampalaya leaves, while adding one more cup of water. Let it cook for five more minutes. Sprinkle in grated cheese at the top. A warm bowl of monggo soup with cheese can be a satisfying way to end the day.
